Arepa topped with chicken in a rich tomato-peanut stew

West African Peanut Stew Arepa — 20-Minute Dinner

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 2 chicken thighs, cut into pieces
  • 1/2 cup tomato sauce
  • 3 tbsp peanut butter
  • 1/2 onion, diced
  • 1 cup broth

How to Make It

  1. Brown the chicken with the onion, 6 minutes.
  2. Stir in the tomato sauce, peanut butter and broth and whisk smooth.
  3. Simmer until the chicken is tender and the sauce thickens, 12 minutes.
  4. Warm the arepas in the toaster on high, 2-3 cycles.
  5. Spoon the peanut stew over each arepa; top with cilantro or peanuts.
