Eggs in Purgatory Arepa — Gluten-Free Italian Breakfast

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 1 cup marinara sauce
  • 1 garlic clove, sliced
  • 3 eggs
  • 3 tbsp grated parmesan
  • Chili flakes

How to Make It

  1. Simmer the marinara with the garlic and a pinch of chili flakes in a skillet, 5 minutes.
  2. Make three wells and crack in the eggs; cover and cook until the whites set, 5-6 minutes.
  3. Warm the arepas in the toaster on high, 2-3 cycles.
  4. Spoon the eggs and sauce over each.
  5. Finish with a snow of parmesan.
