
Channa Aloo Arepa — Gluten-Free Trinidadian Vegan Dinner

What You Need
- 2 Zavor & Co gluten-free arepas
- 1.5 cups canned chickpeas, drained
- 1 cup diced pre-cooked potato
- 1 tbsp Trinidadian (or Madras) curry powder
- 1/2 onion, diced
- 1 cup water
How to Make It
- Soften the onion in a splash of oil, then bloom the curry powder in the oil for 1 minute.
- Add the chickpeas, potato and water; simmer until thick and the potato is very soft, 12 minutes, mashing some.
- Season with salt.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Spoon the channa aloo over each arepa; top with cilantro.
