
Tortang Talong Arepa — Gluten-Free Filipino Dinner

What You Need
- 2 Zavor & Co gluten-free arepas
- 1 medium eggplant
- 3 eggs, lightly beaten
- 1/4 onion, diced
- 2 tbsp diced tomato
- Salt and pepper
How to Make It
- Char the whole eggplant in a dry pan or under a broiler until soft, 10 minutes; peel and flatten with a fork.
- Stir the onion and tomato into the beaten eggs with salt and pepper.
- Dip the flattened eggplant in the egg, then fry in a little oil, flipping once, until golden, 5 minutes.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Cut the omelette and lay it over each arepa.
