
Thai Red Curry Arepa — Gluten-Free Vegetarian Dinner

What You Need
- 2 Zavor & Co gluten-free arepas
- 1 block (14 oz) firm tofu, cubed
- 2 tbsp Thai red curry paste
- 1 cup coconut milk
- 2 cups quick-cooking vegetables (bell pepper, snap peas, carrot)
- Basil
How to Make It
- Pan-fry the tofu in a dry nonstick pan until golden, 8 minutes.
- Push aside, add the curry paste and cook 1 minute, then the coconut milk.
- Add the vegetables and simmer until crisp-tender, 5 minutes.
- Fold the tofu back in.
- Warm the arepas in the toaster on high, 2-3 cycles; spoon the curry over each and top with basil.
