Arepa with Thai Peanut Chicken — Fusion Gluten-Free Dinner

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 2 chicken thighs, boneless, sliced thin
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce (use tamari for fully gluten-free)
  • 1 tbsp lime juice
  • 1 tsp ginger, grated
  • Crushed peanuts and scallions to garnish

How to Make It

  1. Cook chicken in a skillet over medium-high heat until golden, 6–7 minutes.
  2. Whisk peanut butter, soy sauce, lime juice, and ginger with 3 tbsp warm water into a smooth sauce.
  3. Toss cooked chicken in the sauce over low heat, 2 minutes.
  4. Toast arepas on high in the toaster, 2–3 cycles.
  5. Spoon Thai peanut chicken over warm arepa. Garnish with crushed peanuts and scallions.
