
Sri Lankan Dal Arepa — Vegan Gluten-Free Dinner

What You Need
- 2 Zavor & Co gluten-free arepas
- 1 cup red lentils, rinsed
- 1 cup coconut milk
- 1/2 tsp ground turmeric
- 1/4 onion, sliced
- 1/2 tsp mustard seeds
How to Make It
- Simmer the lentils with 1.5 cups water and the turmeric until soft, 12 minutes.
- Stir in the coconut milk and a pinch of salt and warm through.
- Sizzle the mustard seeds and onion in a little oil until the onion is golden.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Spoon the dal over each arepa and top with the tempered onion.
