What You Need

- 16 shrimp, peeled
- 1 cup tomato sauce
- 1 garlic clove, sliced
- 1/4 cup crumbled feta
- 2 tbsp chopped parsley
How to Make It
- Soften the garlic in a splash of oil, then add the tomato sauce and simmer, 5 minutes.
- Nestle the shrimp into the sauce and cook until pink, 3 minutes.
- Scatter the feta over and let it soften off the heat.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Spoon the shrimp, sauce and feta over each arepa; top with parsley.
