What You Need
- 2 Zavor & Co gluten-free arepas
- 1.5 cups canned white beans, drained
- 3 cups spinach
- 4 eggs
- 2 tbsp cream
- 1 garlic clove, sliced
How to Make It
- Soften the garlic in a splash of oil, then add the white beans with a little water and mash some to a creamy base, 4 minutes.
- Stir in the spinach until wilted and add the cream.
- Make four wells and crack in the eggs; cover and cook until whites set, 6 minutes.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Spoon the eggs and creamy beans over each arepa.
