Arepa topped with mashed black beans and tangy cabbage curtido

Black Beans Curtido Arepa — Gluten-Free Salvadoran Dinner

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 1.5 cups black beans
  • 1/2 tsp ground cumin
  • 2 cups shredded cabbage
  • 1/4 cup vinegar
  • 1/2 tsp dried oregano

How to Make It

  1. Toss the cabbage with the vinegar, oregano and a pinch of salt for a quick curtido; set aside.
  2. Warm the black beans with the cumin, mashing about half to a paste, 5 minutes.
  3. Warm the arepas in the toaster on high, 2-3 cycles.
  4. Spread the beans over each.
  5. Top with a mound of the drained curtido.
