What You Need

- 1.5 cups black beans
- 1/2 tsp ground cumin
- 2 cups shredded cabbage
- 1/4 cup vinegar
- 1/2 tsp dried oregano
How to Make It
- Toss the cabbage with the vinegar, oregano and a pinch of salt for a quick curtido; set aside.
- Warm the black beans with the cumin, mashing about half to a paste, 5 minutes.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Spread the beans over each.
- Top with a mound of the drained curtido.
