Ropa Vieja Arepa — Gluten-Free Cuban-Style Dinner

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 2 cups cooked shredded beef (flank or chuck)
  • 1/2 cup tomato sauce
  • 1 bell pepper, sliced
  • 1/2 onion, sliced
  • 6 green olives, sliced

How to Make It

  1. Soften the pepper and onion in a hot pan, 5 minutes.
  2. Add the shredded beef, tomato sauce, olives and a pinch of cumin; simmer until saucy, 8 minutes.
  3. Warm the arepas in the toaster on high, 2-3 cycles.
  4. Spoon the ropa vieja over each warm arepa.
  5. Finish with chopped cilantro.

Ropa vieja — 'old clothes' — is Cuba's national dish: beef simmered so long it falls into soft, cloth-like strands, in a sofrito of peppers, onion and tomato. Leftover pot roast gets you there in minutes.
