What You Need

- 1 bell pepper, sliced

How to Make It
- Soften the pepper and onion in a hot pan, 5 minutes.
- Add the shredded beef, tomato sauce, olives and a pinch of cumin; simmer until saucy, 8 minutes.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Spoon the ropa vieja over each warm arepa.
- Finish with chopped cilantro.
