Category: On-the-Go  |  Ready in 12 minutes  |  Serves 1 adult or 2 kids  |  Naturally gluten-free

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 3 oz sliced corned beef
  • 1 oz Swiss cheese, sliced
  • 3 tbsp sauerkraut, squeezed very dry
  • 2 tbsp Russian dressing (or gluten-free Thousand Island)

How to Make It

  1. Warm the corned beef in a pan, 2 minutes.
  2. Warm the arepas in the toaster on high, 2-3 cycles.
  3. Spread Russian dressing on one arepa.
  4. Layer the corned beef, Swiss and well-drained sauerkraut.
  5. Close and press in a dry pan until the cheese melts, 3-4 minutes; wrap in paper — squeeze the kraut hard so it doesn't leak.

About This Recipe

The Reuben — corned beef, Swiss, sauerkraut and Russian dressing, griddled — is a New York deli institution. Squeezing the sauerkraut bone-dry is the trick to a pressed version that travels.
