About This Recipe
Sweet plantain — plátano maduro — with fried egg and arepa is a classic Colombian desayuno found in homes from Bogotá to Barranquilla. The natural sweetness of ripe plantain against the savory egg is one of the great breakfast combinations in Latin America.
