Philly Chicken Arepa Sandwich — Pressed Handheld Lunch

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 8 oz chicken breast, thinly sliced
  • 1/2 bell pepper, sliced
  • 1/2 onion, sliced
  • 2 oz provolone cheese, sliced
  • 1 tbsp olive oil

How to Make It

  1. Sauté the pepper and onion in the olive oil until soft and lightly charred, 6 minutes; set aside.
  2. Cook the chicken in the same pan until browned and cooked through, 5 minutes.
  3. Warm the arepas in the toaster on high, 2-3 cycles.
  4. Pile the chicken, peppers and onions on one arepa and top with provolone.
  5. Close with the second arepa and press in the pan until the cheese melts; wrap in paper.

The Philly cheesesteak is chopped meat, peppers, onions and melted cheese, griddled and stuffed into a roll. A chicken version pressed between arepas keeps all the flavor and none of the gluten.
