
Peri-Peri Chicken Arepa Sandwich — Sturdy Handheld Lunch

What You Need
- 2 Zavor & Co gluten-free arepas
- 2 chicken thighs, sliced
- 3 tbsp peri-peri sauce
- 1 cup shredded cabbage and carrot, well drained
- 1 tbsp mayonnaise
- 1 tsp lemon juice
How to Make It
- Toss the chicken with 2 tbsp peri-peri sauce and sear in a hot pan until cooked through, 8 minutes.
- Toss the drained cabbage and carrot with the mayonnaise and lemon juice for a compact slaw.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Pile the chicken on one arepa, brush with the last of the peri-peri, and top with the slaw.
- Close with the second arepa, press and wrap in paper.
