Arepa topped with cubes of paneer in a creamy spiced spinach sauce

Palak Paneer Arepa — Gluten-Free Indian Dinner

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 4 oz paneer, cubed
  • 4 cups fresh spinach (or 1 cup frozen, thawed)
  • 1/2 tsp garam masala
  • 1/4 tsp ground cumin
  • 2 tbsp plain yogurt

How to Make It

  1. Wilt the spinach in a dry pan over medium heat, then chop finely (or use thawed frozen).
  2. Return the spinach to the pan with the garam masala, cumin and a pinch of salt, and stir in the yogurt.
  3. Add the paneer cubes and warm through, 3 minutes.
  4. Heat the arepas in the toaster on high, 2-3 cycles.
  5. Spoon the palak paneer over each warm arepa.
