Arepa topped with chickpeas in a spiced creamy spinach sauce

Palak Chana Arepa — Vegetarian Gluten-Free Indian Dinner

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 1.5 cups canned chickpeas, drained
  • 4 cups spinach (or 1 cup frozen, thawed)
  • 1/2 tsp garam masala
  • 1/2 tsp ground cumin
  • 2 tbsp yogurt

How to Make It

  1. Wilt the spinach in a dry pan, then chop finely (or use thawed frozen).
  2. Return to the pan with the garam masala, cumin and a pinch of salt; stir in the yogurt.
  3. Add the chickpeas and simmer until coated and hot, 5 minutes.
  4. Warm the arepas in the toaster on high, 2-3 cycles.
  5. Spoon the palak chana over each arepa.
