Arepa topped with miso-glazed eggplant and edamame

Miso Eggplant Arepa — Gluten-Free Japanese Vegetarian Dinner

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 1 large eggplant, halved and scored
  • 2 tbsp gluten-free white miso mixed with 1 tbsp honey and 1 tsp rice vinegar
  • 1/2 cup shelled edamame, warmed
  • Sesame seeds

How to Make It

  1. Broil or pan-roast the eggplant cut side down until soft, 10 minutes.
  2. Brush the miso-honey glaze over the eggplant and broil 2 minutes more until bubbling.
  3. Warm the arepas in the toaster on high, 2-3 cycles.
  4. Spoon the glazed eggplant and warmed edamame over each arepa.
  5. Scatter with sesame seeds.
