Muffuletta Arepa — Gluten-Free New Orleans Sandwich

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 2 slices ham
  • 3 slices salami
  • 1 oz provolone, sliced
  • 1/4 cup chopped olive salad (giardiniera + green olives), well drained
  • 1 tsp olive oil

How to Make It

  1. Warm the arepas in the toaster on high, 2-3 cycles.
  2. Spread the drained olive salad on one arepa.
  3. Layer the ham, salami and provolone on top.
  4. Close with the second arepa and press firmly, weighting it for a few minutes if you can.
  5. Wrap tightly in paper; pressing and resting is what turns it into one solid, portable brick.

About This Recipe

The muffuletta was invented at a New Orleans Italian grocery in 1906 — cured meats, cheese and a briny olive salad on a round loaf, pressed so the oil soaks through. Draining the olive salad and pressing hard keeps it together.
