Merguez Arepa Sandwich — Spiced Sturdy Handheld Lunch

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 2 merguez sausages (GF), sliced
  • 1 tbsp harissa paste
  • 3 tbsp plain Greek yogurt
  • 1/4 cucumber, grated and squeezed dry

How to Make It

  1. Pan-fry the merguez slices until browned and cooked through, 6-7 minutes.
  2. Stir the grated, squeezed cucumber into the yogurt for a quick tzatziki-style sauce.
  3. Warm the arepas in the toaster on high, 2-3 cycles.
  4. Spread harissa on one arepa and the cucumber yogurt on the other.
  5. Pile the merguez in the middle, close, press and wrap in paper.
