What You Need
- 2 Zavor & Co gluten-free arepas
- 3 eggs, lightly beaten
- 1 tomato, diced (or 3/4 cup canned diced tomato)
- 1/2 green bell pepper, finely chopped
- 2 tbsp olive oil
- Salt and pepper
How to Make It
- Heat the arepas in the toaster on high, 2-3 cycles, until warm.
- Warm the olive oil in a pan over medium heat and soften the pepper, 4 minutes.
- Add the tomato and cook until jammy, 4-5 minutes.
- Pour in the eggs and stir gently until just set and still soft.
- Spoon the menemen over each warm arepa and season.
