
Mapo Tofu Arepa — Gluten-Free Chinese Dinner in 15

What You Need
- 2 Zavor & Co gluten-free arepas
- 1 block (14 oz) silken or firm tofu, cubed
- 4 oz ground pork
- 2 tbsp gluten-free chili bean paste (doubanjiang)
- 1 tsp cornstarch mixed with 1/4 cup water
- 2 scallions, sliced
How to Make It
- Brown the ground pork in a hot pan, 4 minutes.
- Add the chili bean paste and cook 1 minute until fragrant and red.
- Add the tofu and 1/4 cup water and simmer gently, 4 minutes.
- Stir in the cornstarch slurry to thicken.
- Warm the arepas in the toaster on high, 2-3 cycles, spoon over each and top with scallion.
