Mapo Tofu Arepa — Gluten-Free Chinese Dinner in 15

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 1 block (14 oz) silken or firm tofu, cubed
  • 4 oz ground pork
  • 2 tbsp gluten-free chili bean paste (doubanjiang)
  • 1 tsp cornstarch mixed with 1/4 cup water
  • 2 scallions, sliced

How to Make It

  1. Brown the ground pork in a hot pan, 4 minutes.
  2. Add the chili bean paste and cook 1 minute until fragrant and red.
  3. Add the tofu and 1/4 cup water and simmer gently, 4 minutes.
  4. Stir in the cornstarch slurry to thicken.
  5. Warm the arepas in the toaster on high, 2-3 cycles, spoon over each and top with scallion.

Mapo tofu is a Sichuan classic — silky tofu and a little pork in a spicy, savory, tongue-tingling sauce. Use a certified gluten-free chili bean paste (doubanjiang), since most contain wheat.
