Kuku Sabzi Arepa — Gluten-Free Persian Herb Frittata

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 4 eggs
  • 2 cups packed mixed soft herbs (parsley, cilantro, dill)
  • 2 tbsp chopped walnuts
  • 1 tbsp dried barberries (or dried cranberries)
  • 1 tsp turmeric

How to Make It

  1. Beat the eggs with the turmeric and a pinch of salt.
  2. Fold in the finely chopped herbs, walnuts and barberries.
  3. Pour into a hot oiled pan, cover, and cook over low heat until set, 12-14 minutes, flipping once.
  4. Warm the arepas in the toaster on high, 2-3 cycles.
  5. Cut the kuku into wedges and lay over each arepa.

About This Recipe

Kuku sabzi is a Persian herb 'cake' — so packed with parsley, cilantro and dill that it's more green than yellow. Walnuts and tart barberries are traditional. It's eaten warm or cold, often at Nowruz.
