Georgian Cheese & Egg Arepa — Khachapuri-Style Breakfast

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 1 cup shredded mozzarella (or mozzarella + feta mix)
  • 2 eggs
  • 1 tbsp butter
  • Black pepper

How to Make It

  1. Melt the cheese gently in a small pan until molten and stretchy, 3 minutes.
  2. Slide onto a plate, make a well and slide in the egg yolks, stir the whites through.
  3. Add the butter and stir until glossy and just set.
  4. Warm the arepas in the toaster on high, 2-3 cycles.
  5. Spoon the molten cheese and egg over each arepa; finish with pepper.
