
Falafel Chickpea Arepa Sandwich — Gluten-Free and Vegan

What You Need
- 2 Zavor & Co gluten-free arepas
- 1 cup canned chickpeas, drained
- 1 tsp ground cumin
- 1 garlic clove, grated
- 3 tbsp tahini
- 1/4 cup jarred pickled turnip or pickle, drained and chopped
How to Make It
- Mash the chickpeas with the cumin, garlic and a pinch of salt into a coarse, sticky paste.
- Loosen the tahini with 2 tbsp water and a squeeze of lemon until pourable.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Spread the chickpea mash on one arepa, drizzle with tahini, scatter the pickles, and close with the second arepa.
- Press and wrap in paper; the mash holds it together for the road.
