
Falafel Amba Arepa Sandwich — Gluten-Free and Vegan

What You Need
- 2 Zavor & Co gluten-free arepas
- 1 cup canned chickpeas, drained
- 1 tsp ground cumin
- 1 garlic clove, grated
- 3 tbsp amba (pickled-mango sauce)
- 1/3 cucumber, sliced
How to Make It
- Mash the chickpeas with the cumin, garlic and a pinch of salt into a coarse sticky paste.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Spread the chickpea mash on one arepa.
- Drizzle with amba, add cucumber slices.
- Close with the second arepa, press, wrap in paper.
