Seco de Pollo Arepa — Gluten-Free Ecuadorian Dinner

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 2 chicken thighs, cut into pieces
  • 1 cup cilantro leaves blended with 1/4 cup broth
  • 1/2 onion, diced
  • 1/2 tsp ground cumin
  • 1 tomato, diced

How to Make It

  1. Blend the cilantro with the broth until smooth.
  2. Brown the chicken with the onion and cumin, 6 minutes.
  3. Add the tomato and cilantro sauce and simmer until the chicken is tender, 12 minutes.
  4. Warm the arepas in the toaster on high, 2-3 cycles.
  5. Spoon the seco over each arepa.

Seco de pollo is an Ecuadorian Sunday dish — chicken braised in a bright green sauce of blended cilantro, tomato and cumin. 'Seco' means dry, though the sauce is anything but; the name refers to it being served without soup.
