What You Need

- 2 scallions, sliced
- 1 tsp toasted sesame oil
- 1 tsp tamari
- 1 tsp toasted sesame seeds
How to Make It
- Stir the scallions into the beaten eggs with the tamari.
- Pan-fry in a little oil, pushing the eggs around, until just set and lightly golden at the edges, 3 minutes.
- Drizzle with the sesame oil off the heat.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Pile the eggs over each and scatter with sesame seeds.
