Chicken Tikka Arepa Sandwich — Spiced Handheld Lunch

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 2 chicken thighs, cut into pieces
  • 2 tbsp plain yogurt
  • 1 tsp tikka or tandoori spice
  • 3 tbsp mint chutney
  • 1/3 cucumber, sliced and patted dry

How to Make It

  1. Toss the chicken with the yogurt and spice; sear in a hot pan until charred at the edges and cooked through, 8 minutes.
  2. Cool slightly, then toss with the mint chutney so it's well coated.
  3. Warm the arepas in the toaster on high, 2-3 cycles.
  4. Pile the chicken and cucumber on one arepa.
  5. Close, press, wrap in paper.
