Bulgogi Beef Arepa Sandwich — Sturdy Handheld Lunch

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 8 oz thinly sliced beef (sirloin or ribeye)
  • 3 tbsp tamari
  • 1 tbsp honey
  • 1 cup chopped kimchi, well drained
  • 1 tsp toasted sesame oil

How to Make It

  1. Toss the beef with the tamari, honey and a grated clove of garlic if you have one.
  2. Sear in a hot pan in a single layer until caramelized, 4-5 minutes; let cool slightly.
  3. Squeeze the kimchi dry and toss with the sesame oil to make a compact slaw.
  4. Warm the arepas in the toaster on high, 2-3 cycles.
  5. Pile the beef on one arepa, top with the drained kimchi slaw, close with the second arepa, press and wrap.

About This Recipe

Bulgogi means 'fire meat' — thin beef marinated in soy, sugar and garlic, then grilled fast and hot. Use tamari in place of soy sauce to keep it gluten-free, and drain the kimchi well so the sandwich stays tight.
