Banh Mi Chicken Arepa — One-Handed Handheld Lunch

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 2 chicken thighs, thinly sliced
  • 1 tbsp tamari
  • 1/2 cup pickled carrot and daikon, well drained
  • 2 tbsp mayonnaise
  • A few cilantro sprigs and cucumber spears

How to Make It

  1. Toss the chicken with the tamari and sear in a hot pan until cooked through, 8 minutes.
  2. Warm the arepas in the toaster on high, 2-3 cycles.
  3. Spread mayonnaise on one arepa.
  4. Layer the chicken, drained pickled vegetables, cucumber and cilantro on top.
  5. Close with the second arepa, press and wrap in paper.

About This Recipe

The banh mi is Vietnam's take on the French colonial baguette sandwich — pate or grilled meat, quick-pickled daikon and carrot, cilantro, chili. Two warm arepas stand in for the bread; use tamari, not soy sauce.
