
Banh Mi Chicken Arepa — One-Handed Handheld Lunch

What You Need
- 2 Zavor & Co gluten-free arepas
- 2 chicken thighs, thinly sliced
- 1 tbsp tamari
- 1/2 cup pickled carrot and daikon, well drained
- 2 tbsp mayonnaise
- A few cilantro sprigs and cucumber spears
How to Make It
- Toss the chicken with the tamari and sear in a hot pan until cooked through, 8 minutes.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Spread mayonnaise on one arepa.
- Layer the chicken, drained pickled vegetables, cucumber and cilantro on top.
- Close with the second arepa, press and wrap in paper.
