Shakshuka Egg Arepa — Middle Eastern Gluten-Free Brunch

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 2 eggs
  • 1 cup crushed tomatoes
  • 1 clove garlic, minced
  • 1 tsp cumin
  • ½ tsp paprika
  • Fresh parsley

How to Make It

  1. Sauté garlic in a small skillet with a drizzle of olive oil, 1 minute.
  2. Add crushed tomatoes, cumin, and paprika. Simmer 5 minutes.
  3. Make two wells in the sauce and crack an egg into each.
  4. Cover and cook 4–5 minutes until whites are set but yolk is still soft.
  5. Toast arepas, spoon shakshuka over each, garnish with parsley.
