
Salmon Rillettes Arepa — Gluten-Free French Lunchbox

What You Need
- 2 Zavor & Co gluten-free arepas
- 3 oz cooked salmon, flaked
- 2 oz smoked salmon, chopped
- 3 tbsp softened butter (or creme fraiche)
- 1 tbsp lemon juice
- 1/3 cucumber, sliced
How to Make It
- Mash the cooked and smoked salmon with the butter, lemon juice and a pinch of pepper into a coarse spread.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Spread the rillettes thickly on one arepa.
- Layer cucumber slices and dill on top.
- Close with the second arepa, press gently, wrap in paper.
