
Arepa with Peruvian Lomo Saltado — South American Fusion at Its Best
Lomo saltado — Peru's iconic soy-sauced stir-fry of beef, tomatoes, and onions — meets a warm handmade Colombian arepa. Three cultures on one extraordinary plate: Colombian, Peruvian, and Chinese.
Ingredients
2 Zavor & Co gluten-free arepas
½ lb sirloin steak, sliced thin
1 red onion, sliced
2 tomatoes, cut into wedges
2 tbsp gluten-free tamari sauce
1 tbsp red wine vinegar
1 tsp cumin
Fresh cilantro and aji amarillo paste (optional)
How to Make It
Cook beef in a very hot skillet or wok until seared, about 2 minutes. Remove and set aside.
In the same pan, stir-fry onion and tomatoes for 2 minutes.
Return beef. Add soy sauce, vinegar, and cumin. Toss quickly over high heat.
Pile onto a warm arepa.
Top with fresh cilantro and a touch of aji amarillo if available.
