Arepa topped with nutmeg spinach, a poached egg and yogurt hollandaise

Eggs Florentine Arepa — Lightened-Up Gluten-Free Brunch

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 2 cups fresh spinach
  • 1/8 tsp ground nutmeg
  • 2 eggs
  • 3 tbsp plain Greek yogurt
  • 1 tsp lemon juice

How to Make It

  1. Wilt the spinach in a dry pan with the nutmeg and a pinch of salt, 3 minutes.
  2. Poach the eggs in simmering water, 3 minutes for a soft yolk.
  3. Whisk the yogurt with the lemon juice and a pinch of salt for a quick hollandaise.
  4. Warm the arepas in the toaster on high, 2-3 cycles.
  5. Top each arepa with spinach, a poached egg and a spoonful of yogurt hollandaise.

About This Recipe

'Florentine' on a menu means spinach — a nod to Catherine de Medici, who supposedly brought her love of spinach from Florence to the French court. Nutmeg is spinach's classic partner.
