Coronation Chicken Arepa — Make-Ahead Lunchbox Sandwich

What You Need

  • 2 Zavor & Co gluten-free arepas
  • 1 cup cooked chicken, shredded
  • 3 tbsp mayonnaise
  • 1 tsp mild curry powder
  • 8 red grapes, halved
  • 2 tbsp sliced almonds

How to Make It

  1. Stir the mayonnaise and curry powder together in a bowl.
  2. Fold in the chicken, grapes and almonds until evenly coated.
  3. Warm the arepas in the toaster on high, 2-3 cycles.
  4. Pile the chicken salad onto one arepa and top with the second to make a sandwich.
  5. Wrap in paper if packing; it holds together well and tastes great at room temperature.

About This Recipe

Coronation chicken was invented in London in 1953 for Queen Elizabeth II's coronation lunch — cold chicken in a gentle curried dressing with fruit. Seventy years on, it's still the sandwich Britain packs for a picnic.
