What You Need

How to Make It
- Soften the leek in the butter over low heat until silky, 6 minutes.

- Scatter with gruyère and bake at 375F until the whites set, 8 minutes.
- Warm the arepas in the toaster on high, 2-3 cycles.
- Spoon the eggs, leeks and cheese over each arepa.
